Lyophilization is the process of drying fruit by freezing. The fruit is first frozen and subsequently dried at a lower pressure, where the water of the fruit turns into steam and the fruit preserves its natural structure, color, aroma and especially nutritional value, including all the vitamins and minerals contained in fresh fruit. Everything in fresh fruit is also found in lyophilized.
